Caesar Pasta Salad
Without a doubt one of my favourite lunch go-to recipes. You can always add things like chicken or anchovies. This caesar pasta salad is such a quick easy meal to make. Find your favourite caesar salad dressing and go for it.

Caesar Pasta Salad
A tasty caesar pasta salad, you can add anything you want to it, like chicken. Your family will love it.
Ingredients
- 500 g Penne rigate
- 40 g unsalted butter
- 175 g Bacon rashers shortcut, cut into thick strips
- 3 slices sourdough bread cut into 2 cm cubes
- 2 Baby cos trimmed, leaves separated
- 1/3 cup parmesan shaved
- 3 eggs soft boiled, halved
- Chives half chopped
- Caesar salad
Instructions
- Cook pasta according to packet instructions. Drain, refresh under cold water then set aside
- Meanwhile, heat butter in a large frying pan over medium heat until melted. Add bacon and cook, stirring occasionally, for 8 minutes or until crisp. Remove from pan and cook for 8 minutes or until golden and crisp. Set aside.
- Arrange cost leaves in bowls. Toss pasta and half each of the bacon and parmesan in a large bowl until combined. Divide among bowls, then top with egg and remaining bacon and parmesan. Season with pepper, scatter over chives and serve drizzled with dressing.
