Earl Grey Truffles
These are fantastic for when friends drop over for a afternoon coffee. You can bring these out, your guest will love them.

- 2/3 Cup Thickened cream
- 40 g Unsalted Butter Chopped
- 2 Earl Grey Tea tea bags
- 170 g Chocolate Finley chopped bittersweet
- 1/2 Cup Cocoa Powder
- 1 tbs Icing sugar mixture
- Sea salt flakes To serve
Place cream and butter in a small saucepan over high heat, whisking to combine. Bring to the boil. Remove from heat, then add tea bags. Set aside for 15 minutes to infuse.
Place chocolate in a heatproof bowl. Remove tea bags from cream mixture, then pour over chocolate, stirring until mixture is melted and smooth. Cover with plastic wrap and refrigerate for 2 hours or until firm.
Line a baking tray with baking paper. Sift cocoa and icing sugar together in a bowl. Using damp hands, roll 1 tsp chocolate mixture into a ball, then roll in cocoa mixture to coat. Place on tray. Repeat with remaining chocolate mixture and cocoa mixture to make 18 truffles. Sprinkle over sea salt before serving.
If you want to prepare ahead. You can make these earl grey truffles up to a day ahead. Just make sure you store them in an airtight container in the fridge.
Take them out about 30 minutes before serving to your guests.
